New style cauliflower mash


This tasty replacement for traditional mashed potatoes is from the Great Life Cook Book.

Ingredients

  •  1 large yellow onion, diced small
  • 3 cups millet, rinsed well
  • 1 large head cauliflower
  • 1 tsp sea salt
  • 9 cups water

Method

In a large pot, saute the onions in 2 tbsp of water for 3 to 4 minutes.

Add rinsed millet and saute for 5 minutes longer.

Chop cauliflower into large pieces. Add to onions with sea salt and water.

Bring to boil, uncovered, and then lower heat to simmer. Cover and cook until the millet is tender, about 30 minutes. Mash the mixture together with a hand held potato masher or large wooden spoon.
