Humble tofu transformed

I often tell friends that mushrooms are my back stop for breakfast, lunch AND dinner. But I have recently discovered marinated tofu and it sure is a lot more appealing than the vaccum packaging suggests.

My current fave is macro wholefoods markets organic marinated tofu which comes in Thai, Malaysian and Chinese flavours and can be served warm on a salad or with stir fry on rice for something light, tasty and healthy.

When I first learnt to cook with fresh tofu it was fun to make scrambles and hash and then I progressed to silken tofu, my fancy food processor and the wondrous sauces and creams I could whip up.

So now I figure the pre-marinated firm version will be my new vegan “fast food”. Oh and I still love mushrooms!
