Fridge staples: Perfect brown rice every time

Cooking perfect brown rice every time ensures you have a comfort staple on hand in the fridge whenever you need it.

This is the concept of “batch cooking” which will make your meal planning easier and quicker.

Always have a container of rice in the fridge ready to use for salads, or sides or to blend with beans and greens. When you cook and eat brown rice you are eating the whole grain with its nutrients and fibre

INGREDIENTS

  • 1 cup brown rice
  • pinch salt

METHOD

  1. Put the rice in a sieve and rinse well under running water.
  2. Bring a large pot of water to the boil and then add the cup of rice.
  3. You will be cooking the rice rather like pasta in plenty of boiling water, so the size of the pot doesn’t matter as long as it contains plenty of water to cover the rice well. (You can increase the quantity of rice as long as there is enough water in the pot to boil it freely).
  4. As soon as you add the rice to the boiling water, set your timer for 30 minutes and turn the heat down slightly to simmering.
  5. After exactly 30 minutes drain the water off the rice and then return it to the pot with a lid on. Leave it for 10 minutes and the rice will finish cooking in the steam and can be fluffed up. Perfect!

TIP: Cook a couple of cups of brown rice while you are in the kitchen at any time of day and you will always have a great standby.
