This takes a little time to assemble because of the grating and shredding but if you make a big batch of the vegies you can keep half of it in a sealed bag, undressed, in the fridge for a few days.
Asian cabbage salad
Ingredients
- 3 medium carrots shredded
- 1 medium zucchini shredded
- 1/2 head red cabbage finely shredded
- handful snow peas slice lengthways
- handful bean sprouts
- 1/2 cup edamame optional
- 1/2 cup mint and basil leaves optional
- 1 cup large cos lettuce leaves For serving
Instructions
- Mix the salad vegetables in a large bowl, pile on to some lettuce leaves and drizzle with a dressing
