Asian red cabbage salad

This takes a little time to assemble because of the grating and shredding but if you make a big batch of the vegies  you can keep half of it  in a sealed bag, undressed, in the fridge for a few days.

Asian cabbage salad

Ingredients

  • 3 medium carrots shredded
  • 1 medium zucchini shredded
  • 1/2 head red cabbage finely shredded
  • handful snow peas slice lengthways
  • handful bean sprouts
  • 1/2 cup edamame optional
  • 1/2 cup mint and basil leaves optional
  • 1 cup large cos lettuce leaves For serving

Instructions

  • Mix the salad vegetables in a large bowl, pile on to some lettuce leaves and drizzle with a dressing
