Blueberry pancakes

Ingredients

  • 1 banana mashed
  • 1/2 cup buckwheat flour
  • 1/2 cup almond milk
  • 2 tbsp maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 cup blueberries or more if you like
  • 1 teaspoon coconut oil to oil the pan

Instructions

  • Mash the banana (i use frozen banana chunks which i microwave to soften)
  • Put the softened banana in a mixing bowl
  • Add flour, cinnamon and baking powder
  • Measure the almond milk into a jug, and add maple syrup into the jug and stir
  • Add the milk to the flour and banana mixture and stir
  • Add the blueberries (frozen are fine) into the bowl and fold them in
  • Melt the coconut oil on a non stick frypan
  • Fry about 1/4 cup of batter per pancake or make them larger if you prefer
  • when firm, fry on the other side and they are ready to serve when they are browned.
  • Delicious with coconut yoghurt
