Mash the banana (i use frozen banana chunks which i microwave to soften)
Put the softened banana in a mixing bowl
Add flour, cinnamon and baking powder
Measure the almond milk into a jug, and add maple syrup into the jug and stir
Add the milk to the flour and banana mixture and stir
Add the blueberries (frozen are fine) into the bowl and fold them in
Melt the coconut oil on a non stick frypan
Fry about 1/4 cup of batter per pancake or make them larger if you prefer
when firm, fry on the other side and they are ready to serve when they are browned.
