Easy tofu burgers

Ingredients

  • 280 grams extra firm tofu
  • 1 large onion chopped finely
  • 2 cloves garlic minced
  • 2 tbsp flour suggest Besan or chickpea flour
  • 2 tbsp ground flaxseed
  • 2 tbsp sunflower seeds
  • 1 tbsp chia seeds
  • 2 tbsp raw pumpkin seeds (pepitas)
  • 2 tbsp tamari or soy sauce
  • 6 medium mushrooms chopped

Instructions

  • Put the flaxseed, sunflower seed, chia and pepitas into a food processor and blitz into crumbs. Don't over-blend or they will start to turn into paste. Tip this seed mix into a large bowl.
  • Take the firm block of tofu and crumble it in to the bowl with the seed mix, i use my fingers to turn the tofu into a nice rough crumble, it doesn't have to be too fine.
  • Next, sautee the diced onion, chopped mushrooms and minced garlic in a little olive oil in a frying pan.
  • Add the cooled mushroom mix into the large bowl with the tofu.
  • Add the flour and the tamari sauce.
  • The mix has plenty of moisture from the tofu and will stick together if you press it with your fingers. Rest it in the fridge for half an hour before forming it into patties. Chilling helps to firm up the mixture before cooking.
  • Make the patties the size you prefer and fry in a little olive oil.
