Kale is a bit of an acquired taste, probably because of the rough texture. But it’s easy to manage, you just need to roll up your sleeves and give it a massage with a little lemon/olive oil mix OR (my preference) some chopped avocado. You need to strip the kale leaves off the rough stalks first, wash it and pat dry.
Then just chop some avocado into the bowl and start rubbing it into the leaves. It takes several minutes before the kale goes shiny and changes colour, then you know it is done. And if you don’t have avocado handy, you can use 1tbsp olive oil mixed with some lemon juice instead.
